Finger-lickin’ Fried Chicken

This is a low-fat fried chicken and very heart smart. Rather than being immersed in oil in a deep fryer why not try this.

Prep Time 15min + soaking
4 bone-in chicken breast halves
1 cup low-fat buttermilk
1 cup all-purpose flour
Salt
Paprika
Pepper
2 teaspoon canola oil

Cook time 30mins
1)Remove skin and any visible fat from the chicken. Put chicken in a shallow baking dish and pour buttermilk. Cover and refrigerate at least 45mins to 3hrs, turning it occasionally.

2) Preheat oven to 400 F. Mix flour, salt, paprika, and pepper in a plastic bag. Shake chicken, 2 pieces at a time, in the seasoned flour.

3)Heat oil , brown chicken in it until golden brown at least 4-5mins on each side. Put in a baking pan and transfer to oven. Bake uncover until chicken is crispy and juices run clear at least 12mins on each side.
